Here are some kid-tested and approved recipes that the whole family will enjoy!

 
Bread Salad

 Mix up your sandwich! For a healthy and fun twist on lunch box foods, make this Italian bread salad with the help of your child.

 

1/2 medium loaf whole-wheat country bread

1/2 pound fresh mozzarella

4 small tomatoes

4 stalks celery

1 cucumber

1 green pepper

1 red pepper

1 red onion

1 small bunch fresh basil

olive oil (to taste)

Balsamic vinegar (to taste)

Salt and pepper (to taste)

 

*If you want to add some protein: add a 1/2 cup diced salami, diced pepperoni, canned tuna, or white beans as a tasty addition to this dish.

 
1. 
Tear (or cut) the bread into large cubes and place in a large mixing bowl.

            2. Dice the mozzarella, tomatoes, celery, cucumber, peppers, and onion. Add them to the bowl of bread.

            3.Tear the basil into small pieces and add to the bowl.

            4. Add the olive oil, balsamic vinegar, salt, and pepper to the bowl, a little at a time, until the desired taste is achieved. Mix the dressing into the bread salad well and eat.

 Serves 8

 

Fruititos

Who ever thought to make a burrito with fruit?

Easy to prepare, this hand-held treat makes a perfect breakfast, snack, or dessert.


1 cup strawberries

1 kiwi, peeled

1 peach, peeled

1 mango, peeled

1/2 cup applesauce or yogurt

4 (8-inch) flour tortillas, wheat wraps, or other flat bread

 

               1. Dice the fruit into small pieces and set aside.

               2. Place the tortillas or flat bread onto a work surface or plate.

               3. Place 2 tablespoons applesauce or yogurt in center of tortilla and spread, leaving a 1-inch border.

               4. Add a heaping spoonful of each of the diced fruit on top of the spread.

               5. Fold the bottom of the tortilla inward and then roll the sides to form your fruitito.

 Makes 4

 Substitution: If these fruits are not available, substitute a colorful combination of your favorites. Canned fruit is fine. But, be sure to drain, before using. 

For a scrumptious dessert, spread your flat bread with 2 tablespoons of cream cheese, peanut or nut butter, Nutella (hazelnut spread) or Dulce de Leche.
