Serves 4 

Ingredients

  • 2 eggs, beaten
  • 1/4 cup milk
  • 1 ½ cup crushed The Good Crisp Sour Cream & Onion Potato Crisps
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 pound chicken tenders 

 

Directions

  1. Preheat oven to 400°F.
  2. Lightly grease baking sheet with cooking oil spray. Set aside. 
  3. Place beaten eggs and milk in shallow bowl and stir to combine. Set aside.
  4. Combine The Good Crisp Potato Crisps, salt, and pepper in second shallow bowl. Set aside. 
  5. Dip one chicken tender into beaten egg/milk mixture and then into crumb mixture to completely and evenly coat chicken pieces. Place chicken tender on baking sheet. Repeat with remaining chicken tenders.
  6. Bake in oven for 10 minutes. Flip each chicken tender over. Continue to bake for additional 10 minutes, or until fully cooked. 

*Alternative cooking method: Chicken tenders may be fried in pan with oil over medium heat, turning once so cooked evenly on both sides.

A common misconception about cooking is that in order to create a truly delicious and healthy meal, you have to buy dozens of ingredients and spend hours in the kitchen chopping, mixing, baking, and preparing your ingredients only to be completely exhausted afterwards. Our friends at Cooking Light prove that this isn’t the case at all! This Tortellini, Chicken, and Arugula salad comes together in a cinch thanks to the use of a few quality items such as hearty cheese tortellini and shredded rotisserie chicken. Prepare the dressing and pasta ahead of time to make the final assembly even faster. Who knew making dinner on busy weekday nights could be so easy?

 

Ingredients:

  • 1 (9-oz.) package refrigerated cheese tortellini (such as Buitoni), cooked according to package directions
  • 8 ounces skinless, boneless rotisserie chicken breast, shredded (about 2 cups)
  • 1 garlic clove, finely chopped
  • 1/8 teaspoon kosher salt
  • 3 tablespoons extra-virgin olive oil
  • 1/2 teaspoon grated lemon rind
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon granulated sugar
  • 1/2 teaspoon freshly ground black pepper
  • 3 cups baby arugula
  • 1/3 cup thinly sliced shallot
  • 3/4 ounce Parmesan cheese, shaved (about 1/4 cup)

Instructions:

  1. Place tortellini and chicken in a large bowl.
  2. Combine garlic and salt on a cutting board. Mash with the side of a knife to form a paste. Place in a small bowl. Add oil, rind, juice, sugar, and pepper; stir with a whisk.
  3. Add 2 tablespoons dressing to tortellini and chicken; toss to coat. Gently fold in arugula, shallot, and remaining dressing. Sprinkle with shaved Parmesan cheese.


Tips & Trick:

  • For a gluten-free option, substitute the tortellini for brown rice pasta or quinoa.
  • Kids can help shred the chicken and mix the dressing!

Ingredients:

4 teaspoons extra-virgin olive oil, divided
1 tablespoon white balsamic vinegar
1 teaspoon honey
1/2 teaspoon chopped fresh thyme
3/8 teaspoon freshly ground black pepper, divided
1/4 teaspoon kosher salt, divided
2 cups halved strawberries, divided
2 (4-ounce) skinless, boneless chicken breast cutlets
1/4 teaspoon smoked paprika
Cooking spray
4 cups fresh baby spinach
1/4 cup thinly sliced red onion
3 tablespoons chopped pecans, toasted
1 ounce reduced-fat feta cheese, crumbled (about 1/4 cup)

 

 

Instructions:

1. Combine 1 tablespoon oil, vinegar, honey, thyme, 1/4 teaspoon pepper, and 1/8 teaspoon salt in a medium bowl; stir with a whisk. Add 1 cup strawberries, tossing to coat. Let stand at room temperature 10 minutes.

2. Heat a medium skillet over medium-high heat. Brush chicken with remaining 1 teaspoon oil; sprinkle evenly with remaining 1/8 teaspoon pepper, salt, and paprika. Coat pan with cooking spray. Add chicken to pan; cook 2 to 3 minutes on each side or until done. Remove chicken from pan; let stand 5 minutes. Cut across the grain into slices.

3. Divide spinach, remaining 1 cup strawberries, and onion between 2 plates. Top evenly with chicken slices and strawberry-balsamic mixture. Top each serving with 1 1/2 tablespoons pecans and 2 tablespoons cheese.
 

Tips & Trick:

  • Get the kids involved! Let kids top their salads with the pecans and cheese to lend their personal touches.
  • If raw red onions are too strong for your kids growing palates, soak them in ice water after slicing to remove some of the flavor.

Individual White Chicken Pizzas

 

Ingredients

30 ounces refrigerated fresh pizza dough, divided
1/2 cup olive oil
1/4 cup chopped fresh basil
1 teaspoon crushed red pepper
8 garlic cloves, crushed
4 thyme sprigs
4 cups 2% reduced-fat milk
1 cup plain fat-free Greek yogurt
4 teaspoons cider vinegar
1/2 teaspoon kosher salt
12 ounces shredded cooked chicken breast
6.5 ounces preshredded reduced-fat 4-cheese Italian-blend cheese (about 1 2/3 cups)
3 ounces fresh part-skim mozzarella cheese, torn into small pieces
2 tablespoons fresh thyme leaves
1 1/2 teaspoons freshly ground black pepper
1/2 cup small fresh basil leaves

Instructions

1. Place a pizza stone or heavy baking sheet in oven. Preheat oven to 450° (keep pizza stone or baking sheet in oven as it preheats).

2. Let pizza dough rest, covered, at room temperature as oven preheats.

3. Combine oil and next 4 ingredients (through thyme sprigs) in a small saucepan over medium heat. Cook 4 minutes or until garlic begins to brown, stirring frequently. Remove from heat; let stand 5 minutes. Strain mixture through a fine sieve over a small bowl; discard solids.

4. Combine milk, yogurt, and vinegar in a large microwave-safe bowl. Microwave at HIGH 6 minutes. Gently stir to form small curds. Strain curds through a fine sieve; let stand 5 minutes. Discard liquid. Combine oil mixture, cheese curds, and salt, stirring gently.

5. Divide dough into 12 equal pieces (about 2.5 ounces each). Roll each piece into a 6-inch circle on a lightly floured surface (keep dough covered with a damp towel to prevent drying). Spread about 1 1/2 tablespoons oil mixture over each pizza, leaving a 1/2-inch border. Divide chicken, Italian-blend cheese, and mozzarella cheese evenly among pizzas; sprinkle evenly with thyme leaves and black pepper. Carefully remove pizza stone from oven. Arrange 3 to 4 pizzas on pizza stone. Bake at 450° for 8 minutes or until dough is golden and cheese browns. Repeat procedure with remaining pizzas, or follow freezing instructions. Sprinkle pizzas evenly with fresh basil leaves.

TO FREEZE: Bake pizzas on preheated stone for only 5 minutes. Cool; wrap individually in heavy-duty foil, stack, and freeze up to 2 months.

TO REHEAT: No thawing: Place frozen pizzas on a baking sheet that’s not preheated; bake at 450° for 13 minutes or until cheese browns.

Tips & Tricks
