Whether you are looking for new healthy tips and tricks or revamping your lifestyle, everyone could use a little inspiration in the kitchen. The Clinton Health Matters Initiative’s newest project, America Cooks With Chefs, a chef-inspired healthy cooking movement, is aiming to provide just that.

Enter to win!

Six contestants will be chosen for an all-expense-paid trip to team up with James Beard Award-winning chefs for a Kitchen Camp in the chef’s kitchen. The chefs will teach their teammates how to take raw ingredients and cook fast, healthy meals. Apply now by uploading a two minute video.

Along the way, Americans across the country will be inspired by the contestants’ progress through an online video series that captures the action. With their new skills in hand, the contestants will meet again for a Live Cooking Challenge at the Clinton Health Matters Initiative Conference in Palm Springs. A judging panel made up of the chef teammates, experts, and celebrities will select the best dish and crown the winner in front of a live audience.

 Apple Oatmeal Muffin

This recipe came from my dad’s Aunt Florence, a woman whose love shined through her cooking. She would bring out a woven basket with a lovely tea cloth and my dad would practically clap with delight. Years later, I started making them on Christmas Eve after everyone went to sleep, to leave under the tree: a piece of the magic from the Christmas elves. – Abbie Corse, Organic Valley Farmer-Owner

Makes 12 muffins.

Ingredients

  • 1 cup whole wheat pastry flour
  • 1 cup quick cooking oats, uncooked (organic preferred)
  • 1 tablespoon baking powder
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon salt

Step by Step

Heat oven to 400°F. Combine flour, oats, baking powder, cinnamon, nutmeg and salt in a medium bowl; mix well. In a small bowl, beat egg lightly. Stir in milk, butter and syrup. Add to oat mixture, mixing just until dry ingredients are moistened. Stir in apple and raisins.

Spoon batter into 12 medium paper-lined or greased muffin cups (cups will be nearly full). Bake 16 minutes or until wooden pick inserted in center comes out clean. Cool 5 minutes in pan; transfer to wire cooling rack. Serve warm or at room temperature with additional butter if desired.

 Blueberry Pumpkin Bread

Ingredients

  • 1 cup canned solid-pack pumpkin
  • ¾ cup sugar
  • ¼ cup orange juice
  • 2 large eggs
  • ¼ cup vegetable oil
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 teaspoon pumpkin pie spice
  • 1 cup fresh or frozen blueberries, not thawed
  • White icing, optional (recipe follows)

Instructions

  1. Preheat oven to 350°F
  2. Butter an 8-½ x 4-½ inch loaf pan
  3. In large bowl with electric mixer, beat pumpkin, sugar, orange juice, eggs and oil until smooth, about 1 minute
  4. In small bowl, stir flour, baking powder, salt and pumpkin pie spice
  5. Add to pumpkin mixture
  6. Stir just until combined
  7. Spoon 13 of batter into pan
  8. spread evenly
  9. Stir blueberries into remaining batter in bowl and spoon over batter in pan, spread evenly
  10. Bake until a wooden skewer or toothpick inserted in center comes out clean, 60 to 65 minutes
  11. Cool in pan on a rack for 10 minutes
  12. Turn out onto rack
  13. Cool completely
  14. May be wrapped and refrigerated for up to 4 days, or frozen for up to 1 month
  15. If desired, drizzle with White Icing (recipe follows)

White Icing

  1. In bowl, combine 1 cup sifted confectioners ugar and 2 tablespoons softened butter
  2. Add 1-½ to 2 tablespoons milk and ½ teaspoon vanilla
  3. Beat until smooth
  4. Drizzle over cake
  5. Makes about ½ cup

Yield: 1 loaf
