Use whole wheat bread and the family gets a healthy serving of grains; eggs and yogurt provide a dose of protein and calcium. Finally, make sure to use orange juice without any added sugar. Save those calories for other sweet treats!

What Matters To Mom?

Experiment with flavors!

To really pump up the orange flavor, top off with a spoonful of orange jelly or marmalade. Place the jelly/marmalade and additional yogurt on the table for a delicious topping kids can stir up on their own.

If you have an orange and a zester, have the kids help make fresh orange zest. Teach them about the pith, pulp, and the benefits of vitamin C.

Add cinnamon sugar to the egg mixture for additional sweetness.

Ingredients:

4 eggs
¼ cup orange juice
2 tbsp. plain yogurt, plus additional to taste and for garnish
1 loaf whole wheat bread, sliced
2–3 tbsp. butter or nonstick spray for frying
Orange zest, to taste
Maple syrup, to taste

Instructions

1. In a medium mixing bowl, combine eggs, orange juice, and yogurt. Whisk until well blended.

2. Dip slices of bread into mixture, making sure to coat both sides thoroughly. Set pieces of soaked bread aside.

3. In a medium sauté pan, melt butter over medium heat.

4. Place as many bread slices as will easily fit in pan and cook for about 3 to 5 minutes per side, or until golden. Make sure egg is cooked through.

5. Repeat steps 2, 3, and 4 until entire loaf is used up. Garnish French toast with yogurt, orange zest, and syrup to taste.

Serves 4 to 6

Recipe for a Mother’s Day to Remember

  • On Mother’s Day reward mom with a little something we could all use…extra sleep! Let the kids enjoy a morning out gathering fun things for Mom’s brunch with a loved one while she catches some extra zzz’s.  Just don’t forget some flowers!
  • Now it’s brunch time! Begin by turning on some of your favorite tunes, get the kids in the kitchen to help make Cricket Azima’s delicious “Breakfast Cake,” and lastly stir up a pitcher of Cricket Azima’s signature Fizzy Punch for a scrumptious finish to this delicious meal!
  • Now that mom has had some extra sleep and a delicious brunch, she will be ready for the day! Take her on a family outing and , head to Whole Foods Bowery Culinary Center for an interactive Mother’s Day Lunch with The Creative Kitchen.
