Pumpkin Spice Madeleine Cheese Cake
Ingredients:

  • Sugar Bowl Bakery Pumpkin Spice Madeleines 8.4 oz.
  • Pumpkin Seeds 4.0 oz.
  • Butter 3.0 oz for crust and 5 oz for filling
  • Cream Cheese 8.0 oz.
  • Pumpkin Puree 15 oz.
  • Powder Sugar 1 cup
  • Pure Vanilla Extract 1 tsp
  • Cinnamon 1 tsp
  • Ground Nutmeg ½ tsp
  • Salt ¼ tsp
  • BumbleBerry Farm Pumpkin Spice Honey cream spread 3-4oz

Crust Instructions:

  • Add Sugar Bowl Bakery Pumpkin Spice Madeleine & Pumpkin Seeds in a food processor and blend until fine. Spread on a flat sheet pan and bake at 375F for 15 mins. Place back into the food processor and add butter and pulse for 30 seconds or until thoroughly combined. Add the mixture into an 8” springform pan. Using a clean bottom of a measuring cup, press the crumbs until smooth and compact.

Cream Cheese Pumpkin Filling Instructions:

  • In a Kitchen-Aid add Cream Cheese, Butter, Powder Sugar, Pumpkin Puree and mix on 3 rd speed for 3 mins. Add Vanilla, Cinnamon, Ground Nutmeg, and Salt and mix on 3 rd speed for 2 mins. Add cream cheese filling to the crust and place it in the refrigerator until set to the touch. Once set, add Honey spread on top and put back in cooler until the top is firm. Flip cheesecake over, showing the crust side up.

Pumpkin Fritters

EverybodyEatsLunchWhile canned food is often shunned, canned pumpkin purée is one you don’t have to worry about! Canned pumpkin purée is packed with potassium (important for nerve and muscle health), iron (needed to carry oxygen in your blood), vitamin A (great for your eyes), and fiber (helps control blood sugar and keeps you fuller for longer). Plus, our recipe for Pumpkin Fritters has only 3 tablespoons of sugar, making it a healthful alternative to high sugar pumpkin products.

This traditional South African dish is simple and quick to make for or with your family! Ingredients

1 15-oz. can pumpkin purée

½ cup flour

1 egg, beaten

3 tbsp. sugar

1 tsp. baking powder

¼ tsp. salt

2 tbsp. butter

2 tbsp. vegetable oil

½ tsp. ground cinnamon

Yields 4 servings (16 fritters)

 

Instructions

  1. In a large bowl, combine pumpkin, flour, egg, 1 tbsp. of the sugar, baking powder, and salt.
  2. Warm 1 tbsp. of the butter and 1 tbsp. of the oil in a large skillet (big enough to hold eight fritters) over medium heat.
  3. Drop tablespoonfuls of fritter mixture into the hot pan and lightly flatten with a spatula. Cook until golden, about 4 minutes per side.
  4. Repeat for the second batch.
  5. Combine remaining sugar with cinnamon in a small bowl and sprinkle over hot fritters before serving.
